Spinach & Tomato Scramble/Omelette

Ingedients:

  • 1 oz Olive Oil
  • 2 Eggs (or egg whites)
  • 1/2 Tomato
  • 1/2 Cup Fresh Spinach
  • 1 oz Feta (or grated cheese)

Heat the olive oil in a pan over medium heat.  Add the spinach and tomatoes and saute for 1-2 minutes.  While these are cooking beat eggs in bowl.  Add the eggs and stir occasionally or cook omelette style.  When eggs are cooked sprinkle the feta on top to melt.  Feel free to add more of your favorite vieggies.  I use this same recipe with asparagas.

Have a piece of whole wheat toast or whole wheat english muffin and a glass of milk or orange juice with your meal.

 

Vanilla Oatmeal

Ingredients:

  • 1/2 culp Oats
  • 1 cup Water
  • 1 scoop EAS Vanilla Protein Powder
  • A splash of Fat Free Milk
  • 1 capful of Vanilla Extract
  • 1 teaspoon Chopped Almonds

Combine the oats and water into a microwave safe bowl and microwave for 2 1/2 to 3 minutes on high.  Add the protein powder, vanilla extract and milk and mix well.  You may need to add more milk until you find your desired consistency.  To add some healthy fat calories add one teaspoon of chopped almonds.
